It’s been a slow week around these parts, but as promised, here’s some food for your Friday! Super easy, minimal effort, one pot soup with lots of flavor. I based it off of Olive Garden’s recipe for their Italian Sausage soup, but mine was pretty darned tasty. The only differences are minor, such as I used fresh spinach and they used frozen-and-thawed, their tomatoes had sauce in them as well, mine didn’t.
Remember my warning about how I don’t quite follow recipes? Yeah, I did say you’d been warned.
So, check out the quick, healthy and tasty soup:
Ingredient list, though feel free to substitute –I do!
1 tube Italian Sausage
1 bushel fresh spinach leaves, chopped
1 pinch kosher salt
1 big can chopped tomatoes
3-1/2 14 ounce cans beef broth
1/4 cup heavy cream (step down milk fat if desired)
1 tablespoon pepper
1 cup sushi rice
Taking the pot big enough to hold everything, brown the sausage. Whether or not you drain all the fat, some or none is up to you. It adds flavor, but obviously, adds fat.
Pour everything else in, and simmer on medium/medium-low until rice is tender, and serve.
See? I told you it was simple. The time it takes is really going to be limited to just how long it takes you to brown the meat, and however long it takes to cook the rice you choose to use. You could try spicy sausage, brown rice or even quinoa or bulgar wheat, chop your own tomatoes… it’s all pretty simple to substitute. Take it from me, soups are very forgiving foods. It can be as simple as adding a few more spices and stirring if you don’t think it’s quite right.
